Mommies How to make El Salvadorian food....................?

I know I posted on the mommy side ( I am a mommy myself I have a 17 month old) most of us mommies cook so I figured somebody would know....My mothers fiance is from El salvador, and we are from the Dominican Republic so we do not make these dishs, but I love it sooo much and I live alone and the only time I get it is if I go to my mothers fiance's familys house, because they are always cooking. How do you make home made papusas without buying the Maseca, and without filling it with anything i like it plain flat and put the filling on top. Oh and how do you make that chicken its so full of flavour and it is really red I think you have to use ALOT of tomatoes and its saucy chicken and when you cook the whole chicken it just tears apart in the pot because you cook it slowly for a long time and its just so tasty and you put it on top of the papusa.. If you know the ingredients to this chicken please tell me. Thanks in advance.
